
I didn't set out to become a cookbook author or health coach. I was a nurse for years, caring for others while quietly struggling with my own health. Then came my Alpha Gal diagnosis, and everything I thought I knew about food had to change.
Suddenly, dairy was out. Mammal meat was out. And I had a family to feed who wasn't thrilled about my new limitations. So I did what any stubborn southern woman would do: I figured it out. I tested recipes, made adjustments, and discovered that allergen-friendly food could actually be delicious.
That journey led me to holistic health coaching, where I earned my certification and started helping others navigate their own health challenges. I learned that food is powerful, but so is having someone in your corner who understands what you're going through.
I wrote this cookbook because I wanted to give families like mine a resource that made life easier, not harder. I wanted recipes that worked, ingredients you could find, and meals your kids would actually eat.
